ALGIE PETRERE’S WONTON SAUSAGE AND SHRIMP APPETIZERS

Yields: 25–30 Pieces

Comment:
These simple, yet visually appealing appetizers are also extremely tasty. This version uses sausage and cheese, but really the possibilities are endless. Try them with ground meat or even shrimp filling.

Ingredients:
1 pound Cajun or Italian sausage, casings removed
½ pound (71–90 count) shrimp, peeled, deveined and chopped
1 package small wonton wrappers
2 tbsps butter
¼ cup minced red bell pepper
¼ cup minced green bell pepper
¼ cup minced garlic
red pepper flakes to taste
1½ cups shredded cheddar cheese
1 cup shredded pepper jack cheese
¾ cup ranch dressing

Method:
Preheat oven to 350°F. In a large sauté pan, melt butter over medium-high heat. Add bell peppers and minced garlic then sauté 2–3 minutes or until vegetables are wilted. Add sausage and cook until golden brown, stirring constantly. Add chopped shrimp and cook 3–5 minutes or until pink and curled. Season to taste using red pepper flakes. Drain well and allow to cool 10–15 minutes. Press one wonton wrapper into each hollow of a miniature muffin pan. In a large bowl, mix sausage mixture with cheeses and dressing until well blended. Spoon 1 tablespoon of sausage mixture into each wonton cup. Bake 15 minutes or until bubbly. Serve immediately.
